When I was diagnosed with arthritis and in my worst state (2003 just after getting married), I had a great opportunity to develop an appreciation for food that I don't think I would have otherwise. While being severely limited in physical capability, I enjoyed quite a few hours of The Food Network while lying on the couch (I wasn't into my HGTV phase yet...he he he). I was in such pain and felt so useless most evenings. At times, I wasn't able to do anything but lie down, and even that hurt most of the time. But in these moments, I found a passion I didn't know I had...food and all it encompasses. I learned so much (especially from the little personal tips and ideas the chefs would share that you don't always get in a written recipe) and grew to LOVE everything that food has to offer...cooking, tasting, sharing, hosting, experimenting, dining...every last aspect.
Below you will find some of my favorite recipes. Some have been shared with me by family and friends, while others are my own creations. I am not claiming to be an expert of any kind, but I will promise that anything you find here has been made and loved on several occasions.
