My Favorite Chocolate Chip Cookies: If you haven't made them yet... totes should.  That's totes for totally people.  Seriously.
Find the recipe HERE!

Oh Happy Day to you!  (Just a clip from one of my favorite movies!)  When Cooper was a baby, my husband and I would sing Joyful, Joyful, the song they sing at the competition toward the end of the movie all the time...especially while we were packing up to leave and he was snuggled in his carseat.  He always loved it and would goo goo and ga ga and smile at us.  I always pretended he was singing along.

Much love and many blessings,

Our Dinner Tonight and Beautiful Strawberries from Picha Farms

Beautiful STRAWBERRIES from Picha Farms.
Lucky for us, they are not only beautiful, but delicious too!
Sometimes I forget what it's like to bite into a strawberry
that is red through and through. Hallelujah for legit strawberries!

Cooper and I enjoyed quite a few all on their own, and when it was time for dinner,
we added them to our plate full of yum.

Grilled turkey burgers with grilled onions,
cheddar cheese, roma tomatoes,
and a little romaine lettuce.

Also for dinner tonight, Alexia Onion Rings and Waffle Fries
Darn good.

Happy Friday to you all!
Many blessings and good eats to you,

Rockets by Katie Moon

If you have any little boys that love rockets...head on over to the blog Ooh Moon today.  You can download this free rocket illustration done by Katie Moon...print it, frame it, make a game out of it, use it for cards or invitations...your options are limitless.  Awesome right?!  Isn't it cute?

Katie is an artist who is sharing one free illustration every day for a year on her blog Ooh Moon.  I am a HUGE fan of children's literacy...books and this makes me so giddy.  I shared a little bit of my love for kid's books when I shared some of our little buddy's favorites so far, as well as our Christmas collection.  I just can't get enough!

Anyhow, in case you are interested in some of her other illustrations too, take a peek.  If you don't download a specific illustration on the day she offers it for free, you can still download it...but for a small fee, and even then, 10% of all the proceeds from her site go to Compassion International.  Isn't that awesome?!  Katie is so talented, not to mention the sweetest of sweets and quite generous.  Check it out and see if there are any lovely illustrations that will make your wee ones smile.

Thanks Katie Moon for all your beautiful inspiration, art, and generosity!  Love it all!  You're the neatest!

Just a little heads up for my friends.

Blessings on your day!

Father's Day Snapshots

Hi all!  Hoping you experienced a wonderful weekend!  We had a full three days enjoying Meeker Days, a Mariner's game (my husband with his Dad), breaking in our BBQ, and having family over to celebrate Father's Day...sooo relaxed and filled with goodness.  Here are a few glimpses into what went into our mouths on Sunday.

KALE CHIPS ... first time ever tasting these.  We all experimented with them a bit.  When I first bit into one, it had the smell and slight taste of opening a bag of BBQ chips.  No joke.  Crazy.  In my mouth, they had a kind of very light and airy crunch.  While I was glad to try them, as I've been wondering about Kale Chips for a while now, I'm not sure I'd like to sit down to a whole bowl of them.  Maybe it was just this recipe or this particular bunch of kale.  Thanks Mom for trying new things! (RECIPE HERE)  I bet you could go to town flavoring these things with whatever you wanted.  Smitten Kitchen has a good idea for Kale Chips HERE...try sprinkling them on popcorn!  I bet it would be tasty.  And, Kalyn's Kitchen has rounded up a few folks who have blogged about their version of Kale Chips too.  How neat!

VEGGIE KABABS, beautiful TOMATOES that tasted more like candy, and the beginnings of STRAWBERRY SPINACH SALAD.  We also enjoyed BBQ Kalbi Marinated Chicken, Lemon Pepper Shrimp, roasted golden potatoes and yams, and beautiful berries - strawberries, raspberries, and blueberries.

It was a day filled with yum...along with our precious parents and my sister that came to join us.  We shared laughs and stories and just enjoyed a relaxing evening together.  Can you believe I didn't get one picture of people?  Well, I managed to get one of the Coopster before church.  B went to church on Father's Day and helped out in Coop's classroom.  What a Daddy!

Once everyone got to our house, we just hung out and chatted and prepared food and cooked and played outside.  I usually am all up in everything's business taking pictures, but not this time.  I guess I was too busy having fun to take pictures I guess.  Oh and last but not least...

My Mama brought Vegan Peanut Butter Cups for us all to try via The Kind Diet.  They were AMAZING!!!  Every single one of us skeptically took a bite with a look of concern and fret, and as soon as we put the spoon in our mouth and tasted ooey gooey goodness, our facial expressions were immediately that of surprise, delight, joy, and amazement!  These vegan peanut butter cups are absolutely delicioius!  Booyah!  And I'm not talking about Cooper's Horse named Booyah people!  They didn't quite firm up like the picture on The Kind Life Website, so we scooped them out with spoons.  So incredibly yummy.  We ate them as is and also spooned them over our ice cream for dessert...all completely in love with the flavor!  Thanks again Mom for bringing these delicious experiments.

Happy Monday to you dear friends.  I started my medicine up again yesterday.  I am feeling a bit of pain relief today, and it is a welcome, welcome thing!  Hallelujah!

Bless you and your day,

Breaking in the New BBQ!!!

Our BBQ bit the dust at the end of last year, so it was high time we got a new one.  Weather around here has been a bit on the BLEH!!! side for quite some time, so it hasn't quite felt like summer much.  We're hoping this goliath piece of BBQ awesomeness will last our family a long time...grilling our food to perfection each and every time we open that mammoth lid.  Oh how I long for beautiful summer days when cooking dinner means checking on the BBQ a couple times as opposed to standing over the stove constantly.  Less mess too, no fuss.  Glorious.  It is a welcome dose of summer...even if the weather is not cooperating!  We literally had to wipe that sucker down a couple times before covering it for the evening.  Anyhow, our first meal on the BBQ was...

And, might I all made for one lovely meal!

Then after we cleaned up a bit...Cooper ran to the office, grabbed the camera remote and camera tripod (free from my brother...thanks Bro!), and asked for picture time.  How could we resist?  Maybe I should have I did not do my hair or make up, nor did I get dressed for know, like legit clothes you would wear out and about...and this was after people.  Oops.

This one cracks me up.  My husband's reflection is kinda creepy looking in the background on the sliding glass door (counting down the camera timer for me...hence he is not holding up any fingers), I am behind Cooper with a silly face...ready for the click, and Cooper comes running in front of me and the camera just as the camera takes the picture wondering...why hasn't it taken the picture yet?  I love picture time with Cooper!

Next up...Father's Day BBQ at our house.  Looking forward to it!

Happy Father's Day! Our God Is Love by Hillsong (Live)

Yes He is!

Happy Father's Day!  Hope you have a moment to enjoy this one!  It sure makes me want to sing!

Today I'm so thankful for the loving Dad who raised me up, the Daddy to be I fell in love with and married, the awesome Daddy he became, and my little buddy who could one day be an awesome Daddy himself.  Today we are relaxing together as an extended family and enjoying some BBQ.  The menu...

Veggies and Hummus

Grilled Chicken and Shrimp
Grilled Veggies (Kabobs if you will)
Grilled Asparagas
Roasted Golden Potatoes and Yams
Garden Salad

Strawberries and Ice Cream

I'm looking forward to tasting the Kale Chips and vegan Peanut Butter Cups my Mom will be making via The Kind Diet.  I wonder what they'll taste like?!  And, I'm not sure how I'll feel about all that Grilled Chicken and Shrimp after watching Forks Over Knives...but I'm positive it will be worth watching.  Is my diet going to change drastically soon?  Hmmm...

Big hugs to all of you!  I pray you know the love, joy, forgiveness, and salvation found by grace through faith in Jesus Christ...who was sent to take your die for you on the cross...that you might forever find favor in the eyes of our Father in Heaven.

Blessings on your day,

Happy Father's Day Weekend Everyone!

Cooper and Grandpa enjoying a boat ride - Summer 2010

Happy Father's Day weekend to all the Dads out there!  Dad, you and Mom have given us the best gift any parents can give their children.  You have loved us so sacrificially and blessed us abundantly with your time, your faith by example and action, your words of encouragement, your interest in our lives, and your desire to see us be our best.  You have instilled in us a love and respect for each other and others that will forever bond our family and unite us.  I am so thankful to be loved by you and couldn't be more thrilled that Cooper has such an incredible Grandpa (well, Boppa...and now Boppy) and friend to look up to and enjoy growing up with!  Love you so much!

Enjoy the weekend!  We are "breaking in" our new BBQ!  Ours has been broken for quite some time.  Easy, delicious I come!

Memorial Day Weekend on Hood Canal

We had a fun little family get away courtesy of B's parents, and their most generous friend, who invited us to stay in her beautiful house on Hood Canal for Memorial Day Weekend.  We enjoyed hanging out with dear family from Minnesota we don't often get to see, playing in the sand, the beautiful scenery, eating delicioius food (thanks Nana!), and just taking it easy.  The Strawberry Spinach Salad was in attendance, as was some good times for all!

Hope you enjoy a little glimpse into our weekend away!

WARNING:  I paid NO attention to my ISO settings, so some of the pictures are a little grainy.  Also, I wasn't paying close enough attention to my focus settings, so some of the dear sweet faces I meant to capture are a little blurry.  Some photographer I am.  :)

The boy could have dug in the sand for days!

Cute buns digging for clams.

Having a good time being silly.

Nana was an expert clam digger...
one hand holding her cup of coffee
and one hand digging for treasure.

Nothing like digging and flinging sand with your cousin.

Look how much they've grown!

Spontaneous family pictures.
Cooper busted out in song and smiles.
Pretty funny dude.

Nana got some new TOMS for summer...pretty cute!

Nothing beats a fun day of clam digging like a good cup of hot chocolate...
and whip cream mustaches of course.

So precious to hear these two boys playing and talking to each other.
I seriously heard these words consistently...

That's a great idea.
Here ya go.
Want one?
Let's play.

The fun to watch them together.

When the sun came out, baseball was our sport.
Cooper's idea of baseball seemed to be swinging the bat,
running around the bases (or just running around like crazy whether he hit the ball or not),
and doing a little dance/pose.

All the boys had so much fun!

These two must have shared some really great secrets.
They were caught giggling uncontrollably on several occasions.

Sometimes I resort to tickle time to get a smile out of this boy.

In attempting s'mores, the wind found us and started thwarting our efforts.

Cooper was cautious of the fire pit...and tended to steer clear.

In the end, neither wind nor rain stopped our s'mores from being made!

And boy were they good!

Nana was spoiled by time with her two sweet boys, and they loved
every moment she so generously gave to them...and might I add
to us as parents...felt like we got a break from parenting for days!

Thanks to our family for a fun weekend away.
Love you all!
